We have parts ordered. Hubby ordered a part but it was not the right part. We sent it back and ordered the correct one (I hope). It will just take forever to come in. In the meantime, I bought an electric skillet and got a mini countertop oven from the thrift store I volunteer at.

I want them, actually I want the old zippers, straps, buckles, magnets
The hardware, the rest us trash. I repurpose that stuff.

Yes, we do toss stuff that is unusable. 😳
 
Hmmm... I really have no idea what to make for dinner. The past 2 nights my hubby and teenagers have made smash burgers-- I didn't eat them again last night, I'm so burgered out!!
I made homemade chicken and dumplings last week with our very own chicken we raised, Bone broth I made from said chickens and homemade noodley dumpling things. ............. Ahhh... I think I got it. Just remembered I have more bone broth from last week and I will use that and make soup!! Homemade bread of course, apparently my kids can't have soup without mom's homemade bread.... which I have FINALLY perfected my recipe (and No it's not sourdough).

Here is what I call
I’m beat, but they gotta eat!
Ingredients
2- 9” frozen pie shells
1- lg can beef stew or any left overs you have

Pre heat 350
Fill pie shell with your choice filling
Lay 2nd shell on top, squeeze/pinchedges
Cut slits

Bake till golden brown
Yell at one of the young’ ns. To make a salad and set the tsble

I know. I’m sorry. If it wasn’t so time consuming, I’d take those parts off the purses and send them to you.

Okay. Back to dinner. Despite have no oven or cooktop, I’ve been making pretty decent meals. Yesterday I put the rest of the leftover pork roast in the Instant Pot and cooked it more until it was shreddable (it was only sliceable previously). Shredded it and put in some onions and BBQ sauce, put some fries in the air fryer and made a salad. It was pretty good.
 
Do you have any concrete blocks?
An oven can be made very easily in about 30 minutes.
All the concrete blocks we have are along the bottom of the fence to keep our Schnorgi from digging out under the fence. I do have a little countertop oven type thing. It works in a pinch. Electric skillet works in place of the cook top. One part for the oven came in. Still waiting in the circuit board.

Russian salmon loaf: It sounds fancier than it is.

-Make a savory crust. Roll out the bottom crust to about 16" long and 7" wide. Lay it on a non stick cookie sheet.

- dump the filling on and mold it to fit, leaving 1" bare around the edges. Moisten the edges.

-roll out the other half of dough enough to cover the works, molding it to the filling.

-seal the edges with a fork. Trim the edges and cut a 1" circle in the top center to vent the loaf.

-get fancy and roll out the crust scraps to make designs on the loaf.

-paint the whole shebang with an egg wash

-bake at 400° for 50 min.

Filling:

1 cup raw rice to 2 cups chicken stock (cooked ahead)
3 large boiled eggs roughly chopped

1 large or 3 small. Onions diced +
Lots of sliced fresh mushrooms sautéed until onions are soft.

1 large can of pink salmon +1 small can of sockeye salmon. Or 1 lb of fresh salmon gently fried or steamed and flaked.
Add salt to taste but not if you use bullion for cooking the rice.

Gently mix it all together.

Edited to add: this will provide 6 big helpings or 8 smaller but decent sized ones.

Little meatloaf cupcakes cuz I get tired of waiting an hour for a meatloaf. Rice.

How did you make them? Muffin pan? I’ve been thinking of making meatloaf, slice it and freeze for sandwiches. Maybe instead make single serve sizes in a muffin pan? extra crust sounds good. :)

Yep, regular size muffin paper cups in a muffin tin. Made 12 but they were kind of small, we each ate 2. I winged it on the recipe. Ketchup 1/3 cup, half a cup of quick oats, minced garlic clove, Worcestershire sauce, ran out of onions! 360 for 35 minutes. Was pretty good.
 
So I was paying the guys on the job this evening and a pretty blonde shows up and asks me out for Mojitos. I was covered in mud and diesel but didn’t want to hurt her feelings so I followed her into town. She bought us a couple rounds of drinks with Ahi Tuna tacos and Ceviche. It’s been a long week I hope she doesn’t think she can get me liquored up and I’m going to put out.
