Youre Lucky. I bought a Real Smoker, a few months ago. Im smoking my own. The Closest Good Smoked meat is 3 hrs drive from me at "Alice Cooperstown" in PHX.


Good for you, there is nothing like smoked meat done right. I consider myself a barbeque connoisseur. It should be its own food group, the 4th side of the food triangle. There are a couple of great barbeque joints in a town about 15 miles from here and another place about 5 miles away. I’m just not overly fond of their sauce.

So, like a lot of people I go by George’s place (40 miles away) a couple of times a year and buy sauce. I’ll order barbeque from other places but always tell them “no sauce”. I add the sauce I buy from George. These other places know how to smoke pork or chicken so I have no problem buying a sandwich or ribs etc.

But yeah, good barbeque around here is easier to find than a Micky D's...
 
Have ever tried the keto "bread"? It's just egg, cream of garter, spenda (optional) baked. My brother had some made tonight. It's really pretty good.

I made, tried and ate a lot of low carb alternatives in my first year or two of eating keto. After that I decided it was just simpler & easier to just eat pure keto foods. My life is a lot of meat & salad or meat & veggies. I don't feel deprived anymore. Besides, you can make some pretty amazing stuff that is keto. Like prime rib and spinach souffle or reverse seared filet mignon with sauteed bacon, mushrooms and onions. With the money I save from eating clean keto I eat far better than I did before keto.

I was going to mention Splenda is a no-go for me but Grimm seemed to already cover that.

Tonight I am making keto friendly PHO, a Vietnamese soup. In place of noodles I will be using spiralized zucchini (aka zoodles).

Truvia is supposed to be "sugar free", but it is not necessarily the natural food they claim it to be. It is made by Coca Cola and they will not state publicly how it's processed or made. All that is known is that they start out with some kind of stevia-based tea (of sorts), then add a manufactured sugar alcohol called erythritol made from corn starch and then somehow it becomes crystalline like sugar. It is interesting to note that Cargill, the distrubutor and co-producer of Truvia have settled a number of product deception law suits over Truvia with non-disclosure agreements in place. Yet their product description has not changed.

Squirrel and dumplings

My grandmother made the best squirrel dumplings I've ever had. It had to be the lard she cooked with. Tried some at a friends house a few years ago. It didn't compare. :cry:

Same thing with fried apple pies in a cast iron skillet a great aunt used to make... It has to be the lard rendered from your own hogs.
 
I didn’t feel like cooking so I grabbed a bag of Asian dumplings out of the freezer. Last time I went to the “big” town I stopped by the Chinese market. In the market maybe 1 product in 5 has a label in English. Anyway, I bought a package that said “Pre-steamed Pork Dumplings”. Tonight I turned on my air-fryer and checked the back of the dumpling package for instructions. I’m pretty sure they were there, just not in English.

Hmmm, I guess I’m having “an adventure” for dinner! o_O They turned out pretty good! I whipped up a quick hot mustard sauce to dip them in.

Ms Chen makes Incredible Dim Sum for me now and then. Love it.
 
Tonight I am making spicy jalapeno cheeseburgers.

Combine 2lbs ground beef with 1lb ground chuck, add 2-3 tbsp sriracha mayo, 1 finely diced jalapeno, 1 small finely diced onion, black pepper & crushed red pepper flakes to taste. Cube up a small block of medium cheddar into small pieces, mix in. Form into 1/3 lb patties and sprinkle the tops with salt. Broil or grill until medium, top with a slice of pepper jack cheese and let rest covered in tented foil for 3-4 minutes.
