We've been cookin' (and eatin') a lot of foods made by them furriners. It started when we lived in Arizona before we moved here in 2018, and got hooked on Ethiopian food.
Twin Falls ID is a lot smaller and there simply aren't many restaurants here, so we cook for ourselves; we take turns on an every-other-day basis. Yesterday I made Thai tofu curry in yellow curry/coconut milk base, with whatever veggies I found in the fridge that hadn't walked away yet. The meal was pretty easy; I only used one pan.
Tonight, Dawn is making a Greek dinner, which is a lot harder: Avgolemono (chicken lemon egg soup), xoriatiki (red onion/feta/garlic salad), and gyros. We'd found a recipe on how to make "authentic-tasting" gyros using one lb. each lamburger and cowburger, with the usual spices and an egg binder in a meatloaf dish. It turned out great (even the texture). Hopefully, tonight's will be as good!
