We had Granny over so yes it has to be a traditional New Year's dinner. . . Ham, mustard greens, black eyed peas, cabbage, and because my hunny doesn't eat a couple of those green veggies I did him sour cream & chive scallop potatoes. Cornbread along with yeast rolls. I didn't feel like making a dessert and since I was making yeast rolls made enough for two and did a lemon cream cheese braid with an icing. That was dessert. Had the two youngest kids over with one of their gals. DIL stayed home because she has a sinus infection and didn't want to get anyone else sick and we also had our neighbor and BI L came with Granny. It was a nice day to spend with family this evening.
 
I used the Christmas ham bone and made a pot of bean soup. I used the fifteen bean mix vs the navy beans I normally use. Nothing is more satisfying than homemade soup on chilly and dreary day.
 
This was a really easy lunch that will be for dinner as well. I learned something about spaghetti sauce that really helps. My home canned tomatoes have great flavor but are really watery and need to cook down for a long time to thicken up enough for how I like sauce. I used two jars of my tomatoes and one small can of store bought tomato paste. It absorbed most of the excess liquid and the sauce was done in thirty minutes or less. I am stuffed and content with the world at the moment.

Am trying out the instapot for the first time. Not crazy about the directions that came with it as they aren’t really clear with programming and stuff, but just put in a seasoned slab of ribs. I will let you know if this thing is worth it or not in about an hour.

Ok, still don’t like the lack of good directions, but it’s pretty simple to use and you just need to learn the cook times for different foods in the instapot. The ribs turned out great. It was 30mins cook time, with a warm up and cool down period, so really 45mins. Still pretty good for really tender ribs. Clean up was really easy, just one stainless steel pot or bowl in it and a little grate to keep food raised off the bottom. I did wash the inside of the lid too. Still pretty easy. I will definitely use it some more to learn it’s settings and cook times. I did see online there are tons of people that posted recipes for everything you can imagine. That’s good as I still think the people that wrote the instructions and tiny recipe book that came with it should be fired. Overall though, I like it and feel with the much faster cook times it was worth the price.
 
Last night Wife made homemade pimiento cheese and I made a pot of chili . The pimiento cheese recipe came from Steve Doocy's cook book from the FOX and Friends Staff and Guest . This one was from Paula Dean and was a old Georgia recipe that included red pepper flakes .
Also if Your like Me and like bacon for breakfast but refuse to pay $6 a pack . look for a brand called Country Farmhouse . Its around $3 and You get a full pound and not just 12 oz . Its Country style bacon and does not cook away .

Grits casserole will probably last a couple days. I often make it for breakfast for my Bible study class at church and I always make enough for me to have some later.
 
Went down south today to pick up some building materials. It's was an 8 hour round trip. On the way down I stopped and had cheese steak sandwich for lunch at a small general store. Got home to a cold cabin and didn't feel like waiting for the wood stove to heat up enough to cook anything. So I opened a bag of Ceser salad. It was just eatable.
