Since I forgot to get something out early to defrost, so I pulled out a lb of shrimp about 2:30 this afternoon. We ate totally unhealthy with fried everything. . . Shrimp, fries, hush puppies and zucchini.
 
Little ceasers supreme pizza. I ate two slices at 8pm while driving home. Had that stuff all over me..... pizza isn’t good for driving.
I drive by Little Caesars on the way home from work. I almost stopped and bought one. Then I remembered I'm trying to eat healthier and not spend money on eating out. It was very hard to drive past.
 
The way I like my pizza is actually pretty healthy. Tomatoes, onions, mushrooms, and olives with fresh mozarella.
That sounds really good - when I make it myself it's very similar. But Little Caesars is very different!

We are having a family get together down at the beach to celebrate son #3's fiance graduation and their engagement. Going to be cooking fajitas for lunch and hamburgers for dinner. My job was make dessert. Strawberry Swirl Cheesecake

Thank you! It seemed to be a hit. . . It's been years since I made this, but I knew anything with cream cheese she would love. Normally I do the basic cheesecake topped with both chocolate and caramel drizzled on top and add in chunks of chocolate, white chocolate, and bits of caramel. I wanted to know what her favorite was and this was it.

I did a cream cheese lemon braid for Christmas, she reminded me her birthday was in Feb. . . :)
 
Ribs cooked in the instapot to fall apart tender, peas and thick sliced toasted grain bread with butter. And, most importantly, I have enough left for today,
My son told me about a Brazilian food truck that sets up every day locally here. They have bacon wrapped chicken or beef skewers, with fried yucca, rice And other different sides. I’m going to try to break from yard work today and get some to go to try out. I love trying new foods.
 
I made it to the Brazilian place yesterday. Got plates of bacon wrapped and beef skewers. Seasoned and cooked perfectly with a bed of rice and picko. Fried yucca was cut into chunks and were better than regular potatoes any day. Fairly similar though. My favorite thing though was a black bean rice with pork dish called feijoda. It’s the Brazilian national dish and it was able to compete with Popeyes red beans and rice. That’s saying something coming from me!
I’m not sure what I’m cooking today. I guess it’s kind of an obligation to grill something for Memorial Day. I have some T Bone steaks I got on sale in the freezer that will be pulled out I guess.
 
Tonight the wife made a #10 Chuck roast with mashed potatoes, gravy and carrots. #10 is the ear tag number on the last steer we butchered. #15 is in the feed lot now getting fattened up for butchering in September.
That sounds good.
I had a salad. It was okay but I feel like I need to cook a real meal again.

It was fantastic. The wife's boss suggested that she take a month off work to take care of me and to keep me "out of trouble". So I should be getting more great meals. Unfortunately I can't eat like I used too and I've already lost 20 pounds.
 
I grilled a 1.25” thick sirloin for lunch yesterday and had homemade Mac and cheese with it. Then for dinner had a slow cooked Boston butt that was shredded with gravy and egg noodles. I froze half of it for some barbecue later on. Needless to say a diet isn’t at the top of my list right now!
