What's for dinner?

I’ve had chunks of chicken breasts marinating in a Greek marinade all night in the fridge. I will skewer them and cook on the grill for a large lunch today. The rest of the marinade goes over peeled potatoes and baked with some extra garlic in it. A side salad and roasted corn on the Cobb to finish it up. The Greek flavor is easy to replicate for the chicken and potatoes but I haven’t come close to making the salad dressing as good as the Greek restaurant I loved going to. I've gotten to where my main meal is lunch and I’ll just have something lighter later in the day now. Probably the only reason I haven’t gained a load of weight after eating so well lately!

I had a bunch of leftovers in the fridge to use so decided on dirty rice. A leftover of pork roast, smoked chicken and sausage. Ran it all thru the meat grinder with bell pepper and green onions.

Don't know whats for dinner tonight. Haven't seen the wife all day. I think she's down at the old barn site digging through a bunch of old junk.
One mans junk is another (wo)mans treasure. . . you just never know because we do tend to have a different set of eyes.

When I went to go weed my strawberries this evening. I walked into the garden with a bunny. Dogs went crazy and so did he. Short story even shorter, bunny is dead and that is what I will be having for dinner come the next couple days. Once processed, I am soaking him in some milk.
Dogs and humans are good hunting pardners.

She finally showed up a little ago with a load of old bottles and rocks. She's starting to put out a bunch of her "treasures" in the front yard. This includes old milk cans, a cream separator, farm tools and rocks. Many of the rocks came from my mine, some were chipped on by Indians, petrified logs, fossils, etc. Its mostly what I consider junk, but I guess it does dress up the front of the house. We have an old ghost town on the north side of the ranch. She goes out there sometimes and digs through the old dump and buildings. She's always dragging something home.

She is making your house a home. . . I know you guys may not "get it", but can appreciate when all is said and done. At least my hunny can see the benefits when it does happen now.

After play Nana and Pop's today hunny thought we would stop by the rent property on the way home to do some mowing since we had the mower in the back of the truck. At son's house I saw him actually flip the mower backing it off the truck. Low tire is what he tells me. . . I had to make sure that didn't happen once again and will always be on stand by now. In the past when I was at work he flipped it on it side. I am fearful that one day it will land on top of him. Had he not bailed off earlier today it would have totally flipped ON TOP OF HIM. I ended up having to flip it back with gas leaking onto my shoe. So after feeding we had a quick dinner of defrosted shrimp boiled in "Slap Your Mama" shrimp boil along with a pouch of corn that I just poked some holes in to boil. Just one of those days. I have had my shower and done for the day. . . 3 am is only a few hours away.

I once helped set an 800 ton oil rig in the Gulf of Mexico. It would have been very bad it it had flipped over and landed on someone. So we used something called a holdback tugger. I use the same thing (although somewhat smaller) when I load a tractor or something on my trailer. Attach a come along or even a rope and to a pully on the opposite side of the direction it is most likely to flip and maintain tension while ascending or decending.

Fish cake for me, Fish fingers for the wife, with crispy sliced potatoes and peas.

I made brussel sprouts in my air fryer and some steamed sweet potatoes for my meal prep for this week and ate some of those with a snack of cheese and crackers for my supper. I'm going to do some chicken breast in the air fryer too to go with the vegetables for my lunches for the rest of the week.

Long weekend, a couple meals prepared for the week.
A Ceaserish sauce sauce for grilled chicken thighs on Friday. New Chicken breast recipe tried Saturday. (sauce on it was too spicy)
Leftover Caesarish sauce on salmon on Sunday, Leftover Salmon today on salad.
Tomorrow the other chicken breasts minus the too spicy sauce.
Next weekend, I see some beef in the future.

I cut a squash longways and scoop out the guts. Then I put it in a Pyrex bowl with 2 inches of water, cover it with foil and bake it at 350 degrees for 1 hour. Add butter and spices and enjoy. Don't eat the rind.

Pasta and ground beef with parmesan cheese (girls request post game - having daughter's friend over for dinner tonight as her parents both in the hospital now)

Cuke/tomato/mozzarella salad with olive oil and balsamic vinegar

home made bread - loving the King Arthur website. I'm making this bread in my dutch oven on the grill.
