Since I'm back to working out like a caveman again, I'm eating like one. Lol.
I might share my success story in another thread.

Here's a smoke I did last sunday.
Prepared on saturday, laying overnight in my own marinade.

Sunday morning out of the frdige and let it warm up a little. Pat dry and apply home made dry rub.

Throw it in the smoke until the core temp is about 160F. The smoke was 220F.

Turned out perfect. Moist, flavorfull, delicious.

Made up a batch of split pea soup Wife kids and grand kids love the stuff and it's what we also can for storage every year, the batch below makes for 4 with left overs

4 cups of dry split peas
9 cups of hot water

put split peas in crock pot with hot water (let soak for 30 minutes)

1 cup of diced carrots
1 cup of celery
1 cup of chopped onions (walla walla sweet onions)

dump in crock pot, turn crock on high

with the crock heating, cook up the bacon.
1lb of bacon - stack on top of one another and cut in 1/2" slices, add 2tbls of olive oil to cast iron skillet, turn stove on high, when oil starts to smoke add bacon then add 2tbls of honey cook bacon till it starts to turn a golden brown stirring the whole time, once a golden brown dump contents of skillet to crock including grease and oil

dump two level tsp of salt (add to your taste), cook for 45 minutes
after 45 minutes add 1/4 cup of honey (I prefer clove honey)

cook for two to three hours stirring occasionally, might have to top it off with water (but not before adding honey) just once but cook till it's almost thick mush without noticeable water then turn the crock off, let it set till you see the oil settling on top of the peas, stir and serve, should be liquid but not runny ;)
 
You can't beat the old favourites. We're having fish pie tonight. The weather is still crap so comfort food is in order.:)
 
Our friends across the great pond are not known for the best cuisine, but I'm sure the fish pie is good. I suppose if the fish isn't fresh it would be good for this.
I'm taking some redfish out the freezer to make a Cajun Redfish Couvillion. With some French bread to go with it. I need to learn how to bake my own French bread. I don't think it bakes right at high altitudes.
 
You brits are a strange bunch. I've never heard of putting a fish in a pie! :rolleyes:

Ditto...that sounds particularly unappetizing to me...o_O

But then...I don't live on an island.

Cheesy cod pie is good, kind of like a casserole or make a Irish cod pie topped with mash potatoes, we sometimes substitute the cod for smoked salmon. It's an old world dish that still holds its own. A lot of places here in the states call it the fishermans pie or cod and cornchowder pie, up in Alaska they have the russian salmon pie. ;)

Nope, no leftovers. I don't know how offspring manages to eat what he does and still stay slim. By that I mean he went back for seconds. :)
This pie was a mix of Cod, Smoked Haddock and Salmon in a creamy cheese sauce topped with potatoes. One of the best I made was with trout and smoked salmon, I managed to find room for seconds there.:D
 
I'm not a fish fan to begin with, but am always willing to at least try anything before I pass judgement. I wish I liked it more as I know it's healthier than beef by far. About the only way I really enjoy it is a mild white flakey batter fried fillet with a side of fries and a cold beer. Kind of gets rid of the healthy aspect though.
 
I prefer fish to meat myself. We all have different tastes. I think you Americans are weird for topping sweet potato with marshmallow!

Brent, Lisa not a big fan of fish especially pan fish like trout but she loves white meat fish like halibut, cob and flounder though doesn't like salmon unless smoked.

Fish n chips with beer now that's a dish!
