Don't know if you have noticed but I don't particularly care for Mexican food ....but thanks for posting anyway, maybe someone else will like it
I do occasionally make tacos and fajitas mostly for husband

here is my "mexican" casserole:
fry some ground meat of choice ( I use goat or lamb mostly but beef is fine also) with onion , garlic, green pepper, add a can of corn and a can of black beans, plus a can of tomato sauce. Add some taco or chili seasoning. Then make cornbread ( the dough). Add some shredded cheddar , then the corn bread dough and bake in the oven until the cornbread is done
 
dinner snack today ( had it before 6) : 1 beer ( was a little stressed, no weed this week, and I had to give the sheep CDT shots, done now) a piece of multigrain toast and a can of sardines with hot sauce. I don't eat shellfish of any kind, and I am picky about any seafood but for some reason I do eat sardines in cans ( with hot sauce or mustard sauce) . I also like anchovies on pizza but family doesn't so I never put any on. Anyone else on here eat sardines?
 
I prefer mackerel over sardines. Also use anchovy paste on my pizza so others dont have to endure it.

Walked this evening...feeling pretty dang good as it seems my foot has totally healed..we shall see.I did feel a disc trying to bulge a bit a few times during walk but nothing painful.Sat on a hard log glassing the forest a bit and didnt feel disc again..thumbs up on that one!!


it hit 61f and overcast....i felt damp entire walk today...hot for this time of year.

week 6 day 6

today lamb burgers, sweet and sour red cabbage and potatoes
plus instead of regular soup some leftover chicken and dumplings
 
nooooooooo!!!! Well, it happened, my scale broke...( I wished)
I did not lose a pound this week 😒

week 6 day 7 btw

not sure why not but I am actually close to losing it ( did not keep track of ounces, but 1 ounce to the next pound)
maybe that beer I had a few days ago, or maybe not swimming this week? Or maybe my body got used to this and I need to change it up

today is not going to help either, meeting at a Italien restaurant with pizza
I will only have 2 slices

did make soup yesterday evening and had a bowl, split pea, maybe that had too many calories
was planning on eating some before we go to the meeting

so still 16 lbs to go
 
week 7 day 1

going to make Korean bbq pork , rice, bok choi and cucumber carrot salad today
soup will be soup # 1

back on track after the pizza place yesterday, ended up eating 3 slices but they were smaller than the ones I usually have here.. Did NOT eat cake there ( I don't really care for birthday cake, it always tastes chemical to me)
 
I absolutely love egg drop soup!
I had cheesy garlic bread with my tri tip and grilled veggies last night, so i too am on a struggle with my scale. Weighed in at 220.6 this am, even after a 5 mile walk yesterday. I have to accept it. Im eating pretty good for a guy who has lost 40 pounds.
 
well i think its safe to say my foot is healed finally.I put it to test as well as rest of me up a new trail i been saving.Its very nice trail but its much steeper than what i been doing for much longer distance,theres some gentle stuff too.I done 2.7 miles on it in the rain and fog,i was soaked with sweat and rain by time i got back to truck.I didnt summit as it was another half mile to top and it was going to put me at truck at dark and with such heavy fog,cloud cover and rain it got dark early today and i was starting to get tired.I felt it going down hill too..not bad though...pushed myself for sure.Probably be stiff tomorrow and will do my short trail to keep limbered up.

Week 7 day 3

I ended up making hot and sour soup instead of egg drop but without the mushrooms

today I am making leeks with eggs and meatballs plus potatoes and soup # 1
 
week 7 day 5

so I was bad yesterday and had a large piece of super sweet banana cake
plus some chocolate I got at the Aldi on the way back from swimming. At least I did swim

today healthy stuff : salmon, potatoes and salad, plus rice soup
No more cake

I doubt I lost anything this week, did not work that much because my hand and shoulder hurt and ate extra calories
But trying to stay on track from now on
 
I hear ya. Even though my 5 1/2 mile walk yesterday was exhausting, and I didn't change my eating habits, I'm still hovering at the same weight I was 2 weeks ago. I'm in it for the long run, so I'll just play it out.

Last night I had grilled fish and steamed green beans, with a side bowl of stir fried veggies. Oh, how I am craving potatoes and bread, but since I know this is my weakness, I'm avoiding it at all costs.

I just need to avoid sweets. And it's worse, I had the cake after my 6 pm cut off time, around 8 because it wasn't done before then

Exactly. Oh Well! If we all can't relax a bit occasionally, what is the reason for living? We are watching our idiot grand dog right now, while my step daughter is enjoying herself with her hubby while vacationing in Hawaii. They are rewarding us by taking us out to dinner this Saturday To a famous steak house, which specializes in their 1 pound baked potatoes, with cheesy butter. I'm sure I will slip on my diet, but look at their menu and ask yourself, could anyone here ask for a bowl of steamed broccoli while eating here?

Yes I eat something sweet every month, sugar makes my joints hurt. Dw has been telling me this for years, it was not until was off sugar for three months that I felt better.
I miss baked potatoes most, but I can have all the cheese, sour cream & butter I want, just no bread or potatoes. The fasting 8-12 hours helps too.

Pearl, Pearl! You just don't understand how this is weighing on me (pun intended).

Even my cop son in law explained that he knew I was in complete diet mode, and didn't want to mess me up with going to this restaurant, but it is known for their salads and cheesy bread, along with them baked potatoes. I can not turn this down, especially having to deal with their crazy dog. Even the kennel was charging $110 a day because of the skitzo dog.

All week long, I've been thinking of something diet to eat while there, but again, why live if you can't enjoy life occasionally?

But LOL THAT restaurant would not be my choice of food at all. Looked at their menu and I think I would just eat the salad and the bread
If I cheat on my diet, it better be something sweet, cake, cookies, candy or ice cream ( I need to just not eat anything that starts with a c except carrots)
 
Just a reminder. A potato is not the culprit. It's not the potato that keeps people from losing weight. It's the stuff people put on the potato that is the problem. I eat potatoes all the time. When I bake a potato, I will mash the insides with some plant milk, salt, and pepper. No cheese, no butter, no sour cream, etc. IMHO, it's delicious. I always eat the skin too. That's where most of the vitamins and minerals are.

Other times, I will cut raw skin-on potatoes into wedges. Toss with a bit of olive oil and salt. Bake in oven until golden brown. Delicious. Better than any McDonalds french fires.
 
week 7 day 6

I did fine yesterday, no sweets, no junk no eating late
but not sure that will be enough to get rid of the next lb this week...will see tomorrow

today I am making Korean fried chicken, rice and spinach, plus rest of salad ( lettuce)
