Teriyaki chicken breast, rice and fresh collard greens with some pineapple upside cake for desert.

Pineapple upside cake is one of my favorite "pantry" deserts. Just flour, sugar, baking powder, egg and shortening plus a can or two of pineapple with no need for frosting. Use the juice from the can for the liquid (instead of water or milk).

I love pineapple upside down cake, especially with fresh pineapple. But when I gave up carbs I gave that up too. :(

Maybe try out some almond flour cobbler recipes. If you find a good one you could just pour it over pineapple. Here is one though the molasses sounds icky: https://elanaspantry.com/paleo-peach-crisp/

Heavy whipped cream on top probably helps too regardless of the fruit used.

The lovely Mrs. Sentry18 is the dessert maker and she would roll here eyes at the mere mention of sugary pineapple. She does however make a sugar free cheesecake that tastes better than the full carb version. Yum.
 
DW and I stopped at local Waffle House. She had some kind of Bacon/egg/hash brown/ bowl. Me I had the eggs, grits, sausage, Waffle, biscuit and of course coffee. AND yes, I could see all who entered and anybody standing outside the windows. My outer cover shirt keeps the folks from being concerned but I don't need a large napkin to conceal my EDC. You just have to love my beautiful Arizona gun laws. Really good meal too.
 
Dinner tonight was on os.(oldest son).
Which I must say I enjoyed immensely.
So did grand daughter and big sister too.
Nothing says love like eating pizza with 12 year old step grand daughter and 9 month old grand daughter.
Listening to older grand daughter's day about school, softball practice, watching her interact with her little sister.
Even the dog got pizza crust, for snack.
 
Tonight is was burgers on my little smokey joe charcoal grill. Smoked with a few pecan chips of course. Yummy! Today I bought some potato salad from the good deli in the big town. I ate until I couldn't... ;)

Guess what my late night snack is? another burger without the sides of course!
 
Ate a hot dog sliced long ways. Saved other half for later.
w/hot dog chili sauce and mustard.
Glass of milk with Ovaltine.


ETA: I've been enjoying a glass of Ovaltine for yrs; even keep the containers for storing coffee grounds. Recently I came across this article...

Looks good to me.

Thanks. We make a charcuterie once a month or so, and when we do we try and find some interesting meats & cheeses. We have a nice Mediterranean deli that always has some good things to eat and dozens of different olives. Of course we also use some standard fair like smoked gouda and summer sausage. My wife also likes to make sweet potato crackers and things like that for the boards.
 
Too many leftovers in the fridge, so tonight is 'heat and eat'. I am hoping there are some brats & beans left when the little carnivores get through dishing up and microwaving their food. Otherwise I will probably end up with some buffalo wings & celery.
