Well, I'm still full from that first burrito, so I reckon I'll call it a night and go read till I crash... I put everything in the fridge a while ago and did the second set of dishes, so I'm looking good for the morning. Never did take a nap earlier, I think the Diet Pepsi had just enough caffeine in it to keep me awake, lol. No worries, I'll sleep like a log tonight. Y'all be good, I'm out... "HASTA LUEGO!!!" 😴
 
I grilled some swordfish steaks. They came out much better than my previous attempts over the years. I tend to overcook the stupid things and dry them out. Made some Jasmine rice, and green beans sauteed in oil with garlic. Also made some corn on the cob, which made the dinner fail the Home Ec rules for color variety (not to mention the double starch!) But I was thinking the wife would not like the swordfish or the green beans, so I threw in something that I knew she would like. Turned out she actually did like the fish and the beans though!
 
Frying on Friday… fried up a catfish fillet and some homemade fries. I’m not doing something right with my fries. I do a single fry at about 380 degrees. They are cooked through, just not crispy.

I cut them with my fry press, rinse several times to get excess starch off. Then I soak them in cold water in a metal pan I put in the fridge for about a half hour. I spread them out and pat dry with paper towels. Then they go in my fry pot.

Had a large lunch, so I'm not really hungry... just tossed the first batch of pot brownies into the oven, they'll be done in 1/2 hour. Guess I'll sample one afterward, maybe that will bring on the munchies, lol. I'm gonna wait a few days to cook the second batch, we'll see how these turn out... I went with the Betty Crocker 'Salted Caramel' Brownie Mix tonight, lol. :p
 
Too lazy to cook after fighting with my dead PC all day and into the evening. Went out and brought home Chinese food. I went for the Chicken Lo Mein. The wife couldn't decide if she wanted Sesame Shrimp or Shrimp Lo Mein - so she got both! Now we'll be eating Chinese leftovers for a week. Each entree from this restaurant is usually good for three meals. So we ended up with nine meals, of which we ate two tonight. And they really loaded us up on the fried rice. Must have been trying to get rid of it towards the end of the evening when I went there. At least Chinese food reheats well.
