Made a fresh batch of homemade BBQ Baked Beans.

Gonna have chuck tender roast this evening, it looked good in the store, lol... plus this cooler fall weather means I can cook roasts again, I'll probably steam some baby carrots and make some Idahoan mashed taters & gravy to go with the roast. Possibly a small green salad on the side, depends upon how hungry I get after drinking beer this afternoon, lol. I DID pull weeds for several hours this morning, so I'll probably be pretty hungry when dinnertime rolls around. I might even BBQ that roast, I'll have to think about it... might be too much "work" once the time comes, lol. I also have the Nu-Wave Infrared Oven, THAT does a really good job on roasts, but I'm not sure I wanna clean it afterward, lol. We'll see what happens later, might come down to a coin toss, aye? I know my large toaster oven will cook that roast with minimal hassle, so that might just be the way things go... I'm just glad fall is here and I can mack beef roasts again! With all the trimmings! I don't like eating such heavy meals during the heat of summer, but we're in fall now, baby, so BRING ON THE ROAST BEEF! :thumbs:

We are going to the par 3 golf course to meet my cousins.
They have the best pizza around and their sandwiches are great also.
It was an every month deal till Covid.

That didn't work out.
Seems like they started a Mexican flea market in that town.
It ended at 4 PM so the pizza place was packed.
There were 2000 or more people at the flea market so you can imagine what the only restaurant in town was like even though there were several Taco trucks there.
We came back to town and went to a Mexican restaurant that was empty. :)

Enquiring blonde minds want to know. What is it?
Basically chicken enchiladas. Wife just puts her spin on them and renamed it.
She puts a little slice of cream cheese in it with a sour cream and cilantro mix. After they arebrolled up and put in the backing dish, she pours salsa Verde and quest over them and bakes for 15 or so minutes to get everything hot and bubbly

Probably kielbasa, taters and vidalia onions, I am too lazy to do anything else, lol.

You lost me at cilantro. 🤮 It turned something yummy into a big pan of dish soap for me.
 
I have the genetic problem with cilantro to the extent that it makes even a pepper seed size flake of it, contaminate the whole plate.

I am all for putting unusual seasonings in dishes, but the only place suitable for cilantro is the garbage can.

When it was all the rage at restaurants, I quit eat eating out. I still have to tell them no garnishes or it goes back. I can't eat most Mexican or Indian food because of cilantro in everything. This should be in the rant section.

More of that chuck tender roast, but I dunno if I'm gonna wait till dinner, lol. A big ol' steak & cheese sandwich with veggies sounds good, maybe use the French or Italian bread. Yesiree, that sounds tasty, I can reheat the steak and melt the cheese too, that'll do the trick. But first, another beer, lol. I did a lot of work yesterday morning, so no worries if I just take it easy today. The trash bin is out on the street, I'll refill it tomorrow after it gets emptied today. I'm gonna fill that bin every week for a month or two, as I have piles of weeds in the yard. I may burn some of those, gotta wait for a calm morning with no wind, and stand by with the water hose as I torch the weeds... controlled burns are handy when everything is done right. Some of those dried pine needles & cones will make for great fire starter... those things burn like the Branch Davidian compound in Waco!!! :oops:

Lazy is chopping the sausages up into chunks and simmering them on a bed of kraut and potatoes with a pinch of ground red pepper while you watch the WWF smackdown.
 
Man, oh man, that roast beef & cheddar cheese melt was delicious on that Italian bread! So good that I may have another just like it later tonight, lol. My monster sandwich had meat & cheese piled high, mayo, mustard, onion, lettuce & tomato. Used the toaster oven for the bread, mayo, meat & cheese, it was nice and warm. Went down pretty fast, lol... and I'm thinking another of these bad boys later, maybe not QUITE as large, lol. Sure like that roast beef, it's mighty tasty when sliced and put in a sandwich... pieces of it all stacked up, lol. :)
