I made cheese enchiladas last night for dinner. Since I also had a pound of cooked ground beef, I added the ground beef to half of them. I personally liked the beefy cheese enchiladas, but mama liked the normal cheese enchiladas. Sliced olives, green onions and diced green chilies were added to the mix.
 
Wasn't hungry tonight and a neighbor had brought over garden tomatoes. So, I had my first mater sandwich of the season. We've had so much rain even tomatoes taste washed out. Not as good as in years past but cracked pepper and salt gave it some life...

Nothing. BUT breakfast is going to be my mutant ham hunk/bacon hybrid. I think I screwed up, I used plain instead of maple syrup as a flavoring, We'll see. maybe corn syrup is good as a condiment?

I just found out that unsweetened chocolate is used as a meat seasoning in parts of Mexico, Now if I can just get the secret of the mix! taco dude is protective of his recipes!
 
@Magus I've seen chocolate used several unusual ways on cooking shows. Often with southwest type dishes. If I'm not mistaken chocolate and chili are good together. They have similar flavors...

I know cinnamon is great in chili, got that from a cooking show too. Easy to over do it, I use about a 1/4tsp in a 2q pot of chili. I can't taste cinnamon but there's a hint of something rich in the background.
 
I already macked a big ol' steak burrito this afternoon, so I'm not really hungry... I'll probably just finish this cold beer and go read a Western, it's okay to skip a meal in this warm weather. If I get hungry later, I'll raid the fridge and make a snack, lol. I still have plenty of leftovers in the fridge, so heating something in the Metal Mulisha Microwave will be easy... ;)

Cinnamon huh? I thought his secret spice might be ginger root! the dude has this taco called La Polo De Chocolate that will wind your watch! A layer of pink meat, a layer of minced tomato, onion, lettuce and peppers, guacamole, sour cream and some kind of really hot jelly and salsa, each one is a work of art!

The new batch of bacon went nicely with the beans but had an unexpected flavor.
Kind of like a baked bean burrito! LOL

Hmmm. baked pinto beans?
 
Oh hoh, baby!

We had bought one of those ungodly expensive beef tenderloins from Costco for a family event that was canceled, so we froze it.

Then, we were going to have some folks over this past weekend, so we thawed it...but the list of invitees grew too much, so we had to serve something else.

So, we had this amazing beef tenderloin in the fridge...and my wife called me at work, as she was worried if it would be good for the weekend. I said, "Let's do this."

So, she cut it up into tenderoin filets, an prepared the grill. I got home and opened up one of my better cabernet sauvignons. And, my wife and son and I had a very spectacular meal on a very ordinary Thursday night. We could not eat all the meat, even though my son and I ate 4 cuts. (Let's not talk ounces, please. How crass.) I'm not necessarily proud of having eaten like this...but I kind of am.

Poured another glass of wine after dinner, and I said something about chocolate. And, my wife said she had some leftover cream-filled, chocolate-covered eclairs in the fridge from her book club earlier this week....

I'm in heaven. A very extraordinary culinary experience on a very ordinary Thursday night. 😁
