Oh hoh, baby!

We had bought one of those ungodly expensive beef tenderloins from Costco for a family event that was canceled, so we froze it.

Then, we were going to have some folks over this past weekend, so we thawed it...but the list of invitees grew too much, so we had to serve something else.

So, we had this amazing beef tenderloin in the fridge...and my wife called me at work, as she was worried if it would be good for the weekend. I said, "Let's do this."

So, she cut it up into tenderoin filets, an prepared the grill. I got home and opened up one of my better cabernet sauvignons. And, my wife and son and I had a very spectacular meal on a very ordinary Thursday night. We could not eat all the meat, even though my son and I ate 4 cuts. (Let's not talk ounces, please. How crass.) I'm not necessarily proud of having eaten like this...but I kind of am.

Poured another glass of wine after dinner, and I said something about chocolate. And, my wife said she had some leftover cream-filled, chocolate-covered eclairs in the fridge from her book club earlier this week....

I'm in heaven. A very extraordinary culinary experience on a very ordinary Thursday night. 😁

I make it a little milder, since my wife doesn't like spicy. I use half the amount of taco seasoning, otherwise pretty faithful to the recipe. FYI it is about 90 minutes from prep to table: 45-50 minutes to prep, and 35 minutes to bake.

We have had a cousin and his family come in for the last week. They stayed in the cabin on our place and I wanted to get the boys out on the lake at least one morning. I took them out yesterday and we caught several nice fish enough for dinner.

Today was our normal Sunday family dinner night. Our son drives up from his place to eat with us. Unfortunately our daughter lives too far away. Sometimes we set up a Zoom dinner so our daughter and her husband can join in. For those we use dinner trays in front of the large screen TV to eat on. I set up a webcam pointed at us and display the Zoom video on the big screen in front of us. Daughter and her husband do the same on their end. Usually they eat lunch while we eat dinner, due to the four hour time difference. We haven't done one of these Zoom dinners for a while. I need to set one up soon!

On the Traeger grill tonight: New York Strips, corn on the cob, portabella mushrooms, Anaheim peppers. Also a Caesar salad and Carlsberg pilsner (Danish) for me, and a Grolsh pilsner (Dutch) for my son. My wife doesn't do beer, so she had one of those flavored carbonated water drinks.

Temperature was high 70's (maybe low 80's) I'd guess. Wow, what a day and a great dinner!
 
Wow, talk about the way back machine. I haven't had a Grolsh in over 20 years. That is very good beer
Me either, I used to hoard those bottles for my own brews. I miss them!
 
We have so many vegetables right now I don't know what to cook. Made zuccini crust pizza yesterday. So no zuccini today. Maybe green beans and something like breaded pork chops and potatoes

I did notice in the store that you can buy four-packs of those swing-top Grolsh bottles. That costs about the same as a six-pack of ones with regular bottle caps.

You can buy these bottles on Amazon. I bought some last year for my daughter to use for kombucha that she makes. These are 8oz:
