Looking forward to some Southwestern-style chicken & rice: Thai Jasmine Rice, 8 or 10 yardbird drumsticks (already cooked, but it won't hurt to cook 'em again underwater, lol), plenty of primo Hatch Chiles, chunks of white onion & tomato, a few pats of real butter and some seasonings, all baked in my conventional oven for 45 minutes to an hour. Should be mighty tasty! Those Hatch Chiles are SO-O-O GOOD!!! Maybe I can take a pic of the dish once I pull it out of the oven... I love regular chicken & rice, I just felt like spicing it up a bit after buying those primo Hatch Chiles, lol. :cool:

Here's last night's dinner, it was pretty tasty... some of the drumsticks look burnt, but that's just because I already cooked 'em in the NuWave Oven, and the skins browned out a bit in the conventional oven. I like the top layer of rice to be a bit crispy, ya know? Meh, I just peeled the skin off each drumstick anyway, and the meat was juicy and delicious, lol. I like this experimental batch, but truth be told, I think I like my traditional chicken & rice better... it's the first comfort food I remember from my youth. In the future, I think I'll cook my traditional chicken & rice, and keep spicy dishes on the side. No reflection upon this batch of Southwest-style chicken & rice, it is mighty tasty, but I'm so used to traditional chicken & rice that maybe I shouldn't mess with it, lol. It's an ingrained memory thing... my first comfort food! :D

Again, I assure you, underneath the surface the chicken & rice were moist and delicious! The dish just looks dry in this pic, lol... I stored the leftovers properly, and I can always add a bit of water when I reheat them. The rice on top also may have browned out a bit due to the real butter used in my slapped-together recipe, lol. Cheers! :cool:

P.S. Tonight, the bad boy beef roast with mashed potatoes, gravy, and a nice green salad on the side, WOOHOO! :thumbs:
 
Finally cooked that beef roast today, it is delicious! I'll probably have another plate of roast beef & mashed potatoes with gravy tonight, all I have to do is reheat it. I had a pretty good plate earlier, but I purposely did NOT overload it, so I could have another plate tonight, lol. Plenty left for sandwiches too, so I'm looking good for the rest of the week, leftover-wise. I like leftovers, they make life easier during this ongoing summer heat... :cool:

Dunno why I had such a craving for roast beef lately, guess I haven't had it in a while and my system was craving it... that NuWave Oven did a good job as usual, though I don't mind cooking beef roast in the conventional oven, or even the oversized toaster oven. Better to avoid using the big conventional oven in the summer, the NuWave Oven has the added benefit of not heating up its surroundings... that can make a difference when the A/C is running. 😒

Had some good leftovers hours ago, then read a Western... turned out the light to go to sleep, but for some reason I can't sleep, even though I'm comfortably tired. So I'm trying my usual remedy: a cold beer and maybe a snack before crawling back into bed. Not even "into" bed, in this hot weather I sleep buck naked atop the sheets, no blankets whatsoever. Probably TMI for some site members, lol. I chilled the house down too after a hot day, but no sleep yet... my A/C bill is gonna be scary next time around, lol. Hopefully this cold beer will do the trick, it usually does... sometimes, in winter, I'll drink a glass of milk or some hot chocolate, but this is high summer. Can't wait for cooler fall weather to arrive, I sleep so much better when the nights are colder... :confused:
 
I've had cannon's for more than a decade, no trouble out of any of them. After a couple years the ink prices start getting higher. If the ink price gets within $50 of a new printer, I just get a new one. The old cartridges get harder to find and continue going up in price. The cartridges for the new printer are cheaper... Works out about the same year over year cost wise but I have a new printer.

Oh, I always wait until the month the new models come out, but i buy last years printer which is always discounted big time... last time I walked out with a TR 8520 for $120. Gave my old one to a cousin, she's still using it.

Spent several hours* on the phone trying to track down a part i need for the tractor... which is no longer available from the mfg. I'm going to have to track down my own replacement from an industrial supplier. *(power went off 3x today, so I had repeat phone calls 🤬 )

I have what i think is the dimension number. Guess I'll find out when i get a id sup on the line.

Oh, cleaned most of the stove, still have the grates to go, got something constructive done.
Isn’t it sad that products made nowadays are made to be throw away? When it becomes cheaper to buy a new item rather than fix or refill something’s is sad.

We always have a stash of Hint water at our house, too. Grandkids were here this past week. We went through it like water. 🤣

Not cooking dinner tonight - we just had a lunchy/dinner of fried potatoes, sausages, bacon, pancakes etc and now its 'fix yourself some cereal' night. Polytunnel and pets all done, everyone has done their own washing, kitchen is clean, I'm now off duty ;)
 
I took some shots of yesterday's early dinner, I found some thin-sliced sirloin tip on sale so I decided to make some homemade "carne asada" burritos, lol. However, I cheated a bit by baking the sirloin tip in my toaster oven, not enough to dry it out, just enough to cut it up and add it to the mix of Hatch Chiles, onion, vine-ripened tomato, real butter, beer, etc. Turned out really nice, downright delicious and easy enough to make in this hot weather (without heating up the home and conflicting with the A/C). The fresh avocado added to the Hatch Guacamole made for some real flavor too! As I often do, I used some of each bottle of 'El Yucateco' habanero sauce (green & red), not only in the mix but also as a drizzle over the guac & sour cream, lol. Here ya go, quick and fairly easy! :D

P.S. The good news is that I have plenty of leftover burrito mix, lol... but tonight, I wanna work on the leftover chicken & rice dish still in my fridge, it's good to rotate stock and work my way through each batch. At the same time, I like variety, so you'll often find more than one batch of leftovers in my fridge, lol. No worries, I love leftovers, and the batches I cook often taste BETTER after a day or three in the fridge, lol. I always store 'em properly, that's important... oxidation is the enemy when it comes to food storage in the fridge! That's why I always seal stuff up with no air to cause problems... ;)
 
Went to Chuy's yesterday after Ikea, Ate a 1/3 of a Burrito as big as my face. For dinner another 1/3. Tomorrow, the last 1/3. :)
We have a Chuy’s here. I’ve never eaten there, though. We’ll have to give it a try.
Hubby helped a friend in the closest town earlier. He brought home Pizza Hut. Not my favorite, but I don't have to cook!!♥️♥️🥘
I don’t like Pizza Hut, either. Or Dominoes.
