Looking forward to some Southwestern-style chicken & rice: Thai Jasmine Rice, 8 or 10 yardbird drumsticks (already cooked, but it won't hurt to cook 'em again underwater, lol), plenty of primo Hatch Chiles, chunks of white onion & tomato, a few pats of real butter and some seasonings, all baked in my conventional oven for 45 minutes to an hour. Should be mighty tasty! Those Hatch Chiles are SO-O-O GOOD!!! Maybe I can take a pic of the dish once I pull it out of the oven... I love regular chicken & rice, I just felt like spicing it up a bit after buying those primo Hatch Chiles, lol.
