Gaaah, I'm So mad at them for 'Deep sixing' Catfish from the menu.. :confused2: WTHeck, CB?? Anyone have any idea Why in carnation they did that? Costs? (can't hardly believe That, I mean it's Catfish, not 'Mahi-Mahi', etc but..) 'Supply chain'? Something-something-Darkside-something? 🤔

I mean, the Rainbow Trout (that seems to have 'replaced it') is certainly righteous and all but.. Man, I really enjoyed thier Cat-plates.. :(

Since covid!!! I've had trouble getting catfish and Bama is the #2 catfish producer in the nation. And I'm in between mississippi #1 and georgia #3. I guess CB is at the bottom of the waiting list!

Seriously, it's been spotty, production dropped 20%. Problems in getting labor, especially the processors. And the price is up 40%.

That said, i believe some of their problems are by design... the gubmint is clearing trying to screw up everything, not just catfish.

I will note, the catfish Po'boy i had for lunch was yummy. ;)
 
...All of them try to pass that Vietnamese catfish as real catfish.

Made real Peckin duck. Spent an hour trying to blow a duck up like a balloon with the air compressor. Finally got it to work. Many hours later, we had a very nice crispy skinned duck for dinner. Too complicated to do this more than once or twice in a lifetime.
I’ll bet it was good.
 
Cleaned out some leftovers... chicken first, then some Black Forest Ham in a simple sandwich with sliced Italian loaf bread and mayo. Nothing fancy, but still quite filling. Pineapple soda to wash it down, milk and a cookie for dessert a little while later. I'll have to get rid of more leftovers tomorrow, reclaim my fridge before going shopping again... ;)

Oh man, both of those plates of food look yummy!

Since we went to Costco yesterday, tonight is "Costco foods night". I need to get cookin', it's already 7:30pm here! I'm thinking some of the Costco frozen Panko Breaded Shrimp in the air fryer (those are really good IMHO!) and another rice-like thing we picked up there. I have plenty of green things around the house to make a good salad to go with it.

Better get moving if I want to eat by 8:00 ... 🏃‍♂️
 
Those are really GOOD!
I actually consider them "high end restaurant quality". To me, they are better than the shrimp served at mid-range restaurants, like Applebee's. Mind you, I am not trashing Applebee's - their fried shrimp aren't terrible or anything. But I think the frozen ones from Costco have them beat. Either out of the air fryer or out of a simple toaster oven.
 
I’ll have to get some of that shrimp on my next run to Costco.

The "Panko" ones are the good ones IMHO. They also have a "Tempura" one that is not bad or anything, but I don't think near as good as the Panko one. But that would definitely be a personal taste thing. The Pankos are the ones I recommend.
