I cook my meat with a can of Rotel.

HA! That is kinda what we do., we mix in a can of re-fried beans with green chili's, and some water, just enough to thin the bean mixture a little once the meat is cooked

Alexandra’s parents took us to Red Lobster for dinner this evening.

1 can of re-fried beans
1 can of Rotel tomatoes and chilies
1 bag of taco cheese.
Sour cream
Blazing hot salsa.
guacamole
Onion if desired.
Heat the beans in a microwave-safe dish with 2 cap fulls of Italian dressing 3 minutes.
In a platter place 2 tortilla shells and smear a row of tomatoes and chilies.
Sour cream.
guacamole.
Salsa.
Any lettuce and other turf.
Smear on a wad of the refried beans and dust with cheese. flip up the bottom and roll it tight, blast it with the ranch dressing!

Tonight, one of my favorites: Panzanella...Italian bread salad...turn some old bread into a spectacular meal.

There may be other items served tonight, but I might not notice due to my wife's panzanella sitting on the table.

Basically, oiled & grilled baguette, diced tomatoes, red onion, garlic, red wine vinegar, olive oil, basil, etc. Did I mention garlic?...I think my wife put too much fresh garlic in it the first time she made it, and I loved it, and the precedent was set. Mmmmm. :)

Picture from online, but it gives you an idea... And it goes well with a little Italian red wine.

'Salvadorean-style':
- 1 large 'hoagie' roll, split & toasted
- Yer Fav 'Mayo' on 1-side
- Spread of Refried Beans (we like Blackies or Reds, best..) on opposite
- Griddle-sizzled Smoked Ham-slices (2-3, depending on size of roll used..)
- Griddle-sizzled 'Quesillo' (or Mozzarella) slices (again, 2-3, depending on size..)
- Diced-Rings of fresh Onion
- Thin-slices of fresh Roma or 'Beefsteak' Tomato (salted / peppered)
- Strip or two of Iceberg, lightly salted
- Avocado-strips (if you wish.. We Do! But just didn't have any, tonite, Derp..)

..And, obviously you 'Close this up before Eating'.. :p

I went to Willy's and had him make me a "peanut" Chicken/bacon/slaw + fries
Willy feeds you right, so I ate the sandwich and gave the landlord my fries. I kid you not, I didn't eat again until late last night! And that was one of his "SMALL" sandwiches! a 20$ bill will feed you nice all day long with a half-pound whatever you ordered, a pound of fries and an Arnold Palmer!

He has his own variation of the quadruple bypass burger! you can't eat it all in one meal! I tried!

Mexi Coca-Cola in Glass Only.

Yes and ice cold. there is a country store 5 or 6 miles from me that sells it. I stop often to grab a few.
I usually put one in the freezer about a half hour or so before I'm ready for it.
