Yes and ice cold. ...I usually put one in the freezer about a half hour or so before I'm ready...

Yessir, there's truly nothin like an Ice Cold 'Real' (cane-sugared) Coca-Cola in glass.. Got a couple Cases for post-SHTF stashed under the category of 'comfort items'.. :cool:

.And yah, +1 on the 'freezer technique'.. ~38หš is Just about Perfect. :cool: Do-gotta be Careful with the "or So" part, there.. (Ask me how I know.. ๐Ÿ’ฅ

This time of year I eat a lot of homegrown tomato and cheese sandwiches. Itโ€™s been a favorite of mine for 50 years.

I am not sure what dinner qualifies as tonight. It is either take out or leftover take out chinese food, as it will arrive after a nine hour delivery/ road trip. SIL is coming for a visit and picked it up on her way through the really big city. It should arrive in about an hour.

'Salvadorean-style':
- 1 large 'hoagie' roll, split & toasted
- Yer Fav 'Mayo' on 1-side
- Spread of Refried Beans (we like Blackies or Reds, best..) on opposite
- Griddle-sizzled Smoked Ham-slices (2-3, depending on size of roll used..)
- Griddle-sizzled 'Quesillo' (or Mozzarella) slices (again, 2-3, depending on size..)
- Diced-Rings of fresh Onion
- Thin-slices of fresh Roma or 'Beefsteak' Tomato (salted / peppered)
- Strip or two of Iceberg, lightly salted
- Avocado-strips (if you wish.. We Do! But just didn't have any, tonite, Derp..)

..And, obviously you 'Close this up before Eating'.. :p

Very yummy, and Very Filling, yet quick and easy to make.. ๐Ÿ‘ Wash-down Great with an ice-cold Mexi Coca-Cola in Glass Only.. Buen Provecho, Urrrrrp! ;)

Tonight the neighbor got introduced to "Sun Gold Cherry Tomatoes". She ate very one that was ripe.

She will feed the community cats when I move, I will set up a food delivery for her and the cats.
Thank goodness!! I was worried about them! I hated to think about driving up there to do it!!

Thought you might want to know... Last week in the little town i saw a sign for the new county wide animal shelter. There's never been one til now! A small one opened a decade ago but you had to prove you lived in the city limits to use it. County residents were barred. Changes taking place everywhere.

@SoJer that looks good, never had Tortas before.

Tonight i had chips, made a big salad and fried a catfish fillet. Too much salad, didn't finish my fish, it was a big fillet. Guess I'll have a catfish Po'boy for lunch tomorrow.

Well that didn't work out the way I was told. I was told they were bringing dinner.

It turns out they stopped for stuff and I had to cook it when they got here. So, hours later I'm still cooking. I am tired.

Tomorrow I have to make Pekin duck. Not how I envisioned the next few days.

Yep, they are Easy and yet Very-satisfying.. Prep-notes to add: Recommend to put the Mayo / Frijoles + Cholula, etc on the lightly-toasted bread, first - Then, once you've melted the cheese on the griddle, slap that on, Just before folding the Ham-up on top.. (Then the tomates, onion, etc, etc..) Just makes the 'assembly' quicker this way, and serves up Fresh n Hot. :cool:

@SoJer that looks good, never had Tortas before.

Oh, man, LOVE me some Catfish. ๐Ÿ˜ And actually, I think you Could even sub-in a pan fried - but thinnish, so it doesn't end up Too oily, etc - filet of Cat for the Ham, in a Torta.. ๐Ÿค” I'm Certain the Beans + Cat-juice flavors would complement well.. Maybe toss a bit of fresh Cilantro on top.. Sort of a 'PoBoy-Fusion'.. ;)

Aye, second only to dunkin' a Nice-fatty Grilled Cheese on Sourdough in an ample bowl of Tomato / Basil Soup.. ๐Ÿ‘

Shrmip fajitas and a bowl of bean dip. Washed down with a tall cold Dos Equies draft

Well, it is National Fajita Day! Saw it somewhere online today.

Picked up a 1/2 slab of ribs from the place down the road. They were excellent!! Their ribs are always good but these were perfect! :)
 
Cracker Barrel had the Friday fish fry and...

Gaaah, I'm So mad at them for 'Deep sixing' Catfish from the menu.. :confused2: WTHeck, CB?? Anyone have any idea Why in carnation they did that? Costs? (can't hardly believe That, I mean it's Catfish, not 'Mahi-Mahi', etc but..) 'Supply chain'? Something-something-Darkside-something? ๐Ÿค”

I mean, the Rainbow Trout (that seems to have 'replaced it') is certainly righteous and all but.. Man, I really enjoyed thier Cat-plates.. :(
