Last night the wife made enchiladas for dinner. Mine were stuffed with jalapenos and a couple smoked hot peppers and drenched in my famous hot sauce. They were almost too hot to eat and woke me up at 3am.
😂 that's how you know its good, when you almost poop yourself.
 
I’ve been craving chili and can’t stand on my new knee long enough to make it without having some pain. I don’t feel up to directing Hubby how to make it while I sit at the kitchen table. I have to be hands on, eyeballing the concoction. So Hubby drove into town for some carry out chili. It really didn’t hit the spot like my own chili does. I can’t wait to be full functioning again. The floors need to be vacuumed and mopped because one of my dogs is a digger and she drags grit and dirt in. Hubby will do it but I want to be doing it. 😭
 
Last night made baked potatoes with garlic butter and cheese, and chicken fajitas, using leftover chicken from the bank hol roast. I cooked a small smoked ham yesterday, and have veg cooked for dinner tonight, so everyone can just heat up their own as they come in.
 
It's the trailer park version of s**t on a shingle.
Shred and stir fry 5 pieces of baloney (3 servings) Make gravy in the grease, Mix the baloney back in. Make toast, plop a fried egg on it, and cover it in the gravy and baloney.

I'd go for fried bologna, but the fried egg would be an interesting addition :)
