Tonight I fried up the ocean perch in the fry daddy. I used the Zatarain's fish fry batter. The perch is actually pretty good fish. The store had farmed raised catfish fillets on sale but had sold out by the time I got there.
I like a thick crust so I used an egg and milk wet dip before rolling in the fry batter. The perch fillets were narrow. I sliced them in half length wise so they were 2-3 inches long by 1-1.5 inches wide. They fried up quick 2-3 minutes.
I made a batch of french fries in the air fryer. I was enjoying my dinner when I realized I didn't make hush-puppies! Darn! I saw the Zatatain's hushpuppy premix at the store... don't know why I didn't grab a box.
Chicken Enchilades, Spanish Rice, some kind of vegetable.
Vanilla ice cream with dark fudge brownie crumbles with fudge sauce.
All desserts are sugar free.
I have to use up some leftover ham.
I'm making something with it and pasta, cheese and peas. lol
Probably make a cheese sauce for over the ham,peas and pasta
An egg on a rice cake with a tiny bit of low fat mayo, 2 ounce chunk of cheddar cheese, grapes. Maybe a bite or two of ham when it comes out of the oven.
The ham came out so good! Haven't been asked but telling you anyway--I make a paste of instant coffee granules, dijon mustard, ground cloves and honey. Smear it all over the ham and loosely cover. Always tastes great!
Venison, turkey,and beef chili with Fritos! Last years venison, Jennie-os turkey sausage ( because the chili covered up the taste) and hamburger meat. All meats needed using up.
Chicken breasts stuffed with cream cheese, cheddar and spices, riced cauliflower and green beans. Half a baked apple with a little cottage cheese for dessert.
No real supper last nigh because I had a meeting at church. I just had an apple, fries ( I got my new air fryer in last night and a small PB will BB jam after I got home.
Today I’m going to make a rotisserie chicken in my new AF. I’m really enjoying it.
