Dinner was a big bowl of chili a cousin brought over. Had my favorite lunch today though... thick slice bacon and home fries w/bell peppers and onion...

We just finished the product of my culinary talents. Beef & vegetable stew. My flour slurry was a little on the thin side for the amount ( 5 quarts) Lotts of mixed veggies & chunks of 4 huge potatoes.
I used a big shoulder roast.
I pressure cooked the beef chunks with Lipton beef & onion dry soup mix.
Not my best ever , but good enough to eat it 2 more times.

I want the recipe for the omelet.
Pretty straightforward:
3 eggs.
1/8 cup of buttermilk.
big pinch of Bisquick. like 1/2 tablespoon.
your favorite spices.
Froth with a whisk and pour into a buttered nonstick skillet on medium heat.
When the top is covered in bubbles, add your cheese, and let it start to melt.
gently fold in half and cook until brown, then flip and repeat.
