I had the leftovers from the red beans and rice I made earlier this week and banana bread for dessert.I had leftover steak for lunch and leftover lasagna for dinner. Definitely not going hungry just yet. Making a lot of bread in the machine now and considering what to have for tomorrow.
I will be okay for the few months. I was took inventory of my stash yesterday when I was pulling some out for someone who has lost her job. Considering I don't actually eat that much I will be okay for a while.I just hope we can all continue to post about how well we are eating over the next few months or longer. I really don’t want to find out how those #10 cans of freeze dried foods taste.......
I'm not the biggest fan of black beans either, but they're okay. I don't think I have many of them though I saw a lot at Walmart yesterday while I was there (and there were very few other beans of any kind).It took me a while to figure out how to cook black beans so that they were palatable, but the other day I made a batch of Black Beans and Rice that was really good.
Black beans have about the highest level of antioxidants of any food, higher than blueberries. They are also high in soluble fiber, protein, and a number of essential minerals.
And they are CHEAP!

I had a black bean and rice dish at a Mexican restaurant that was really good. Wish I had paid more attention to what was in it. On the other hand I wish they were open and I could go have some again!I think most people don't know what to do with black beans. If you just boil them like butter beans they are not very palatable. And unless you cook them long enough, they cause gas.
The only reason I bought them was because they were on a steep sale and were much cheaper than pinto beans, which is what I normally buy. I decided I had to find a way to cook them that was edible. Slow cooking at 200°F for 6 hours is the ticket.

Homemade jerky is one of my favorite things in life. I don’t do the sweet but like slightly salty and spicy.I'm making 5 pound of sweet and spicy jerky. It's been marinating all night and should be ready to go in the smoker in a couple hours.
