Right now I have leftovers in the fridge. I got motivated and cooked a lot and won't have to again for a while. There's huge barbecued ribs, meatloaf with rice and gravy, homemade mac n cheese, and left over fajitas from my favorite Mexican restauraunt. The wife is visiting her mother so me and the dog are feasting.
 
I'm having a leftover weekend too. I just had the last of the beef and barley soup and we're having a remodelled spaghetti sauce leftover for dinner tonight with bubble and squeak.
 
Son 3 brought over deer meat today which had some deer sausage. . . yep it got defrosted and that is what hunny is having. As for me, since I had the over indulgence meal yesterday will settle with a big salad with baked chicken shreds. I refuse to gain extra weight. Today I was stuck inside with canning so other than the daily housekeeping chores I didn't get much outdoor exercise.

People don't realize how much time goes into canning. I start and end by cleaning the kitchen, and have all the washing and prep in between. Wish I could do more of it though as its one of the most gratifying things I've ever done. The 9 pints of green bean pickles I made tonight are priceless to me.

I can honestly say there is nothing as rewarding as opening that cupboard door and gazing upon row after row of home canned produce, it gives me a real glow.(I'm easily pleased:D) and it's even better if you grew/shot/caught it yourself.

Amen. So far everything I've canned I grew, but that's only because there's no farmers market near me. The stuff at Walmart isn't worth canning!
 
Winn Dixie has these bags of chicken wings/drums for 6 and change. Two of those, some wing sauce, and some time in the deep fryer, and that's what's up for tonight. Some pasta with a mild chicken sauce on the side, and a little side salad.
 
A few weeks ago I bought a couple of cans of BBQ flavour Pulled Pork. I noticed it was on sale today so I opened a tin to try before buying more. It wasn't half bad, it was actually shredded Pork! The sauce was a bit bland, but I soon zipped it up with some Fajita seasoning and used it to fill some tortillas. It's worth getting more..
 
I turned 53 today. Don't know if that's good or bad.... Went to a Chinese/Mongolian buffet I like. My son and DIL took me, and we watched an episode of The Walking Dead and Saturday Night Live. Food along with some good wine and entertainment and I'm content with the world. Hope everyone out there has had as good a day.

Thank you very much. Once you're over 50 they don't matter as much, but hey, it's a great excuse to eat too much and have an extra glass of wine!

Thanks, everyone. Not so sure about that many more thing though. I'm certainly not ready to check out tomorrow, but with the aches and pains I've allready got, who wants to live forever!
 
Bought a beef round roast today. Seared it with olive oil and some spices in a frying pan, then put it in the oven at 275deg for an hour and fifteen minutes on top of a broiler pan to drip. Cut up the last of my white potatoes from the garden, some celery, a large onion, some mushrooms and a pint of carrots I had canned earlier. They went in a Dutch oven for a little over an hour with garlic, pepper and some beef broth. I let the roast stand for 15 mins, then sliced it into thin lunchmeat. I made gravy from the vegetable juice and poured it over everything on my plate. Life is pretty good sometimes.... I'm set on leftovers for several days, and bagged 4 sandwich baggies of sliced roast beast in the freezer.
I'm almost hungry again just writing about this.

I ate a salad with cooked chicken. . . since I worked today and it has been a long week so far, hunny got some things from the stock room. . .poor mans steak (meat patties and gravy), mixed veggies (whatever I had a little bit left over got mixed, corn, lima, green beans, carrots) then a salad. Yesterday I made a double batch of 5 lb fudge with a layer of caramel and pecans in the middle so that was dessert. The fudge will be half for Thanksgiving and the other half saved for Christmas. It freezes beautifully.
 
Tomorrow I am going to try 'butterflying' the turkey for the first time. I may not look the same as the classic turkey, but after reading about it it just makes sense to cook evenly and have that seasoned crispy skin all over. I'll let you know how it turns out.
 
Yesterday had some bacon/onion wrapped hens, marinaded 5hrs then smoked for 3.5hrs (apple/mesquite wood) and baked for 30 minutes.

I like to bake things a little after smoking too. Makes me feel safer about eating pinkish poultry.
I did the turkey the new way today. It's called spatchcock turkey, you can google it. Basically after cutting out the backbone you press it flat on an elevated grate over a drip pan. It's cooked at 450 for just 80 minutes. It was by far the best bird I've ever had. Way juicier breastmeat and the skin on the entire bird was seasoned crispy perfection. I guess even an old dog can learn a new trick once in a while. I'm going to cook another one the same way in a few weeks, but do it on the ceramic egg grill to add some smoke flavor.

Pecan Praline Cheesecake is the bomb!!! And why in the heck do I not do this favorite more often, . . . oh yeah, I could eat the whole darn thing myself. Let's just say that I ate a little of everything and a good portion was harvested from the farm. We only had half the kids here, but it was good time with family. Will see one more of the boys and his wife this weekend with granddaughter. We went over a couple weeks ago for her 1st birthday and had fun at her party with 3 little one year olds! They all slept very well that night from what I am told.

Pork rib roast. A pigs version of prime rib. Got it on sale at Walmart for 6.69. Yeah! It's laying on a bed of seasoned fresh red and white baby potatoes, carrots and onions. In about 1.5 hrs I'll be in heaven. (Hog heaven). I would make a really crappy Muslim.
