That all sounds really good, as a side to a dead animal somewhere! Hmmm, maybe that's why my cholesterol is so hi?

I would typically agree, but the portobello is a really hearty mushroom. We tried this as a side before, and really, it just fills you up too much. There's a reason the veggie-heads use them as a burger substitute.... You'd be surprised. So far, it's the ONLY meat-free dish I can think of, that I eat, lol....

As for the frozen pizzas....we do the same, and doctor them up with more pepperoni, onions, peppers, etc. (we get the bags of seasoning veggies, as they have both), and more cheese. Just for nights when we don't have time to cook. More of an emergency meal than a planned one. Otherwise, we just get the stuff to do our own pizzas. It's remarkably easy, quick, and tastes a hell of a lot better. It just takes a little more prep and cook time.
 
Dinner yeah, breakfast nay.... The cardboard adjective just didn't do it for me :)
Right now I'm living out of an ice chest so it's hard to keep anything cold for long. Plus I have to do all my cooking outside and the yellow jackets are really bad this time of year, both of which limits what I can make for meals. The yellow jackets haven't figured out how to get in the toaster oven yet. The dang bees will take meat right out of a skillet.
 
Well I started some pinto beans in the crock and added in some chicken, ham hock, garlic, salt and pepper along with some tomato chicken bouillon. This will be served over rice. Then made up some fried cornbread. . . these are delish and I could use this instead of rice but hunny's gotta have his rice.

Fried Cornbread (recipe from Nana)
Put some water on to boil (about 2 1/2 - 3 cups depending). Then put about 1 1/2 c cornmeal, 1/4 c flour, 1 tsp baking powder, 3 tsp sugar and 2 tsp salt in a bowl and stir to mix. Then pour boiling water in while stirring. It takes a lot of water, but it thickens A LOT and really quick. (Don't be scared, if you make it too thin you can just drop it in the grease by the spoon). I keep a bowl of ice water handy to cool my hands 'cause making those patties will cook your hands! Then just fry on med/hi heat till golden & drain on paper towels.

When I make homemade pizza from scratch it ends up costing four times as much as just buying it! Not as good though. I have recently heard about grilled pizza. I have one of those ceramic egg grills and may try it before long.

Yeah, it is a bit pricey making your own pizzas, unless you get some of the major things on sale (like the pizza sauce and the crust). The rest we usually have on hand.

The only reason I have one of those grills is I got it for just over 100 bucks! I was just in the right place at the right time. Would I pay 800.00 for one? Not a chance in ...... It's really nice, but not that nice. I make my own dough, and sometimes even the sauce, but when you go buy a list of ingredients it always adds up. It is always fun to make them though, that counts for something.
 
tonight i ate blue ribbon creamy chicken rice,with home canned chicken mixed in with it.the chicken i added,i canned july 14th..in which my dog n me agree,it's still good :p

The other night, we did crock pot french dips.

Crocked a well tenderized beef roast in 2 cans of beef consomme and 2 cans of french onion soup. Let it crock all day (while we were at work) to the point you could shred it with a fork.

Sauteed some mushrooms, peppers, and onions with olive oil and minced garlic, and butter when we got home.

Big hoagie rolls, split, then put some butter on the halves, and quickly toast them, put some provolone cheese on the warm buns, spoon on some of the beef, then use the aus jus in the crock pot for the french dip.....

Yum... (we did some fries on the side).

I'm drooling! Beef is my favorite thing in the world, just about any way you can make it, but French dips, when the aus jus is good, is one of my favorites. Really sucks that next week I'm having a stint put in. Seems like all the red meat I've eaten over my lifetime has finally caught up to me. I still eat it, it's just more seldom now. Getting old really sucks...
 
Today I'm going to try my carbonara spaghetti! As my mom says, there is nothing better as adding some bacon to your spagetti :D
 
I was craving something sweet so I thawed six cups of blueberries and made a pie. I like to just slitghtly undercook it, so the blueberries are still whole (not mush) and they burst in your mouth. For dinner I made two scrambled eggs on French bread with smoked provolone and American cheese. Quick, easy and good. Life is good with a full belly.....
 
Tonight was chips and salsa. It was store bought ghost pepper salsa, but it was still good. Dessert will be fruit cocktail out of a can. I'm bringing the new trailer home on Monday and once it's set up I'll be able to make some decent meals again.

If you throw in some red wine in that fruit cocktail a few hours in advance..... Just sayin
 
Gaz's post inspired me. Have a crockpot of steak simmering in juices and onions, and cut up a bunch of thick fries in the oven. I have hoagies with a little butter and shredded mozzarella ready to go in the oven in a few minutes now. The Au ju is rich and flavorful. A good French dip is one of my favorite things in the world.
 
I have honey and mustard chicken simmering away in the crockpot, I made some Gnocci this morning to go with it for dinner tonight.

That's beautiful! I haven't had really good Mexican in a while. My son is turning 28 in a couple days, so I'm taking him and his wife to a steakhouse in a few minutes. She's still primping.... Unfortunately my wife is too sick to go, but insisting we still go. I haven't had a ribeye in too long. It's few and far between now, but I still believe in indulging occasionally. I'm even thinking a cold draft beer to go with it.

That looks awesome! Yeah, I remember when you were bragging and was jealous at that time and now that I see. . . you better believe!! We have Tex Mex around here and honestly it is mainly chains when you go into town.

That looks great. I love Mexican food. About 3 years ago I hired a Mexican girl to help manage the house and cook for us. She said she was a good cook, but that girl couldn't make a taco! I was so disappointed. I had to send her back to Mexico after a few months.

My Dad hired these folks upteen years ago straight out of mexico, he was such a good hand dad gave him land to do as he pleases and I always enjoyed his company. My kids grew up with his his kids and they are part of the family so every now and then I'm treated with some good cooking.
 
I got off easy. . . had a meeting at BYC since the city sold the property that the club leased from. Went to go find out what was happening to the property and had a pleasant surprise. . .it was catered BBQ. Good brisket, chicken & links. . the beans (out of the can), dirty rice, & potato salad were ok. Banana pudding, . . hmmm. BUT HEY!!! I didn't have to cook!!!! :)
 
Not really dinner, but I put some porridge in the slow cooker overnight. I just used rolled oats and water and buttered the crock This morning I added some milk powder and a bit of brown sugar, it's fantastic!
