I made a big pot of spaghetti sauce with beef and sausage and a few jars or canned tomatoes from last years garden. I still have 2/3s of a pot left so tonight it's going to be lasagna. Hey, I wasn't serious when I said I wanted to loose twenty five lbs!:confused:
 
I had some ham, olives, sharp cheddar cheese, peanuts and a sleeve of saltine crackers. It may not be gourmet, but I have a full belly and just didn't feel like cooking.
 
Trying to lose weight, so we've been keeping it a bit more simple. A lot of nights, just some marinated chicken breast (garlic and herb marinade) on the Foreman grill, with salad on the side. I basically add the chicken to the salad and use some of the marinade for dressing.
 
Wife was busy with tasks this weekend, so I did the cooking.

I made some Chicken Marsala. Basically, cut up chicken breasts, Marsala sauce (think mushroom/wine sauce), with mushrooms, diced onion, and served it over some fettuccine noodles.

Sounds great! I'm currently eating a chunk of extra sharp cheddar, a dollop of crunchy peanut butter, some saltines and a bag of Ruffles chips. Let's just say it was a busy day. The good news, the electrical company is doing well, the bad news, I'm eating like this!
 
so... when I started dating my boyfriend, he could not make anything but toast and some macaroni things + could not do the laundry properly.

Today, fellow preppers, my boyfriend made lasagna from scratch and he now know how to do the laudry by him self! So proud!
 
Guess it was pizza day all around. Mine was homemade, with everything I could find in the fridge. Green pepper, onion, olives, hamburger, sausage, mozzarella, crushed red pepper, and store bought pizza sauce and pepperoni. The bread machine makes the dough. It's a fun way to spend an evening.
 
My wife was feeling good enough to cook today, and turned the leftover spaghetti sauce into an amazing lasagna. Oh hell, who needs to loose weight anyways! On an upside though, I have some pretty good sized green tomatoes in the greenhouse now. I can hardly wait to get the first taste of a vine ripened one.
 
Easy dinner today because I'm hosting a homeparty elsewhere today.

For two people:
2 chicken breasts
Spices of your choice
2 portions of rice
Salad
Chicken sauce, bretagne

Supplies:
Sharp knife and a cutting board (remember to clean before you switch from chicken to vegetables)
Oven safe dish (pyrex is golden)
Frying pan (we have non-stick and therefore don't use any fat while frying)
Spatula
Bowl for your salad


How to:

Pre heat your oven to 200C or 390F.
Slice the chicken breasts in bite sizes. Apply spices of your choice and lightly fry them. They don't need to be cooked through since they are going into the oven.
When the chicken is done, put them in your oven safe dish and into the oven for 20min.

Make your favourite salad and keept it in the fridge while you make the rest of your dinner.
Cook the rice according to the type you are using. Do the same with the sauce.

Aaaaand, presto! Dinner!
 
those non stick skillets sure do come in handy..we got a new one at wal mart,at the 1st of the month.i've used it to fry up scrambled eggs and hamburger in it all ready..and it's deffently a keeper..

i opened a quart jar of my beans n ham yesterday.in which that was lunch n supper. it was canned may 29th of this year
 
Just used my last jar of home grown, home canned tomatoes *sob,sniff* to make spag bog for supper. Have Wimbledon to watch so I wanted to get ahead.

Sounds like bachelor food! I'm pretty much having potatoes with something every night. I have months of supply from the spring planting, and will do another fall planting shortly. Potatoes just became my new favorite crop! I made a milk and flour sauce, wth pepper and chives and mozzarella cheese. I poured it over thinly sliced red potatoes and onions and baked for thirty five mins. I also parboiled the potatoes a little to quicken the cook time as I was tired and hungry. I also boiled some peas from the garden in canned turkey broth, then added some store bought green beans to it. Lastly was sirloin steak on the grill. I even washed it down with a little muscadine wine. Life is good some days....
 
Dinner tonight was Roasted turkey that I took out to defrost last week. Hunny's request while I was letting him out the gate for work was cornbread stuffing. . . sure no problem :(! I already had a busy day planned with knocking down dead wood from the goat pasture and hauling it off and cleaning out the chicken coop. I made a honey brown sugar injection for the turkey and put it on to cook 3 hrs and 45 minutes. (It was almost 15 lbs) Got some stuffing out of the freezer along with some green bean casserole. Made some mashed potatoes and gravy and then thought since it is almost like a Thanksgiving dinner, I made a sweet potato pie out of my Sweet potato butter that I canned up earlier this year and lard form the piggy. Yep hunny was surprised! It is Thursday after all. . . Since I didn't boil it, tomorrow I will debone it, crack them and throw into a pot of water to make a broth to can up. Then I do have a bunch of soups that I will be making with the meat to prep for winter time!
