Just curious. What do you use for a tortilla?

I don't. The tortilla is just a conveyance to get the food from the plate to your mouth. A fork does the same thing and then I get the full flavor of the ingredient instead of having them washed out by flour or corn. Keto recipes generally have a lot more flavor than their non-keto counterparts. Tonight I grilled 3 NY Strips and 4 chicken breasts that marinated (separately) for 24 hour in garlic, lime juice, red pepper flakes, cilantro, cumin, oregano, Spanish paprika and black pepper. I then stir fried two kinds of onion, 3 kinds of bell pepper, pablano and jalapeno peppers. The meat was cut into strips and mixed with the onions and peppers to finish it off. The pico and guac was served on the side.

That sounds wonderful! I'm within about 2 weeks of trying some of these. I'll be the one who insigates, cooks, and keeps up with it. My hubby is going to try it, but he doesn't handle change well.
 
Lunch was a small BLT on toasted french bread with chips, tasty. I forgot to thaw out meat for dinner. I was going to use up some shiitake mushrooms in the fridge and fry them up with beef tips. So, I fried up the mushrooms in butter, threw in some diced spam and a handful of frozen peas. I seasoned them with salt and just a little tarragon.

It was actually good! My experiments usually end up in the dog bowl. :D

Going out for V-Day to my wife's favorite restaurant. I almost always get the same thing, a medium rare king-cut filet Mignon with roasted red pepper cream sauce and garlic sauteed asparagus. My wife will get something that lived under water or some kind of surf & turf.
 
I'm having little people staying the night. Their parents will be celebrating Valentine's Day on an overnight date without us.

The plan is for the parents to bring a large bucket of KFC with all the fixings at the time of drop off. I hope they don't forget the KFC, lol.
 
Last night I was in the dawg house, so I didn't eat. (when will I ever learn!)

Tonight we had that Costco Ravioli, which is made fresh everyday, and the bake in the oven type. Dang, that was great on an empty stomach.

They are super good! I was telling @Fort about them a few weeks back.

Tonight is spaghetti with home made sauce from the freezer. Being lazy.

In my part of the world, that might be called goulash. Fried burger broken down into smaller pieces with onion, some macaroni and something tomato. Water can be added to help the macaroni cook. It is cooked in a frying pan on the stove until the macaroni is cooked. That is the basic recipe, but it can be made with a few variations. You use whatever you have or like for the tomatoes. It could be tomato sauce, paste, soup, chopped tomatoes, spagetti sauce. Some people add more vegetables, some never do. It is a classic meal or was when I was growing up.
