I am eating alone tonight, so I am making what we call a "plate pizza". I take a metal pie pan and put some non-stick foil on the bottom. Then I put in a think later of shredded mozzarella, provolone and parmesan cheeses, drizzle the top with garlic-oregano infused olive oil and bake it until it is just crispy. Then I will add some cooked crumbled ground beef, pepperoni, Canadian bacon, a little diced onion, green pepper, mushrooms, tomatoes. Most of this is leftovers from other meals and snacks. I will drizzle it again in garlic-oregano olive oil, sprinkle on a little Italian seasoning and cover the top with more shredded cheese. Bake it up until nice and bubbly and slide it onto a plate. All the deliciousness of supreme pizza with none of the filler. If you make the bottom "crust" crispy enough you can even pick it up, but I don't so I just use a fork.
