Catfish and frog legs .

Which do you prefer? I use Jasmine (long grain) for just about everything. It's puffier, easy to cook with less starch than short grain so it's less sticky. In my experience long grain is much better in leftovers than short grain.
I just did a search for a recipe and it said basmati rice. I've got basmati and jasmine rice.

RED BEANS AND RICE

prep time: 20 MINUTES
cook time: 40 MINUTES
total time: 1 HOUR
So thick, so creamy and so flavorful! The beans are cooked just right – perfectly tender, served with rice and smoky andouille sausage.

INGREDIENTS:
  • 1 cup basmati rice
  • 1 tablespoon vegetable oil
  • 1 (12.8-ounce) package smoked andouille sausage, thinly sliced
  • 1 medium sweet onion, diced
  • 1 green bell pepper, diced
  • 2 celery ribs, diced
  • 2 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons Cajun seasoning, salt-free
  • 3 (15-ounce) cans red beans, drained and rinsed
  • 3 cups chicken stock
  • 1 teaspoon hot sauce
  • 1 bay leaf
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves
DIRECTIONS:
  1. In a large saucepan of 2 cups water, cook rice according to package instructions; set aside.
  2. Heat vegetable oil in a large stockpot or Dutch oven over medium heat. Working in batches, add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes; set aside.
  3. Add onion, bell pepper and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
  4. Stir in tomato paste, garlic and Cajun seasoning until fragrant, about 1 minute.
  5. Stir in red beans, chicken stock, hot sauce, bay leaf and sausage; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer for 15 minutes. Uncover; continue to simmer until reduced, an additional 15 minutes.
  6. Using a wooden spoon, mash beans until slightly thickened, if desired; season with salt and pepper, to taste.
  7. Serve immediately, topped with rice and garnished with parsley, if desired.
 
Those frog legs look great! It's been years and years...

What is the best rice for making these recipes?
Probably not what you're looking for, but I use riced cauliflower. Much better for me and with the Sazon seasoning, it tastes good.

I have always made my own red beans using a lot more bell peppers celery and onion than called for and a lot of spice!

Today, I had a veggie wrap with a small order of shoestring fries at a local restaurant. Very good!
 
Tonight we are having something the wife mixed up, cooked cabbage, sausage & h-burger, rice, in a tomato sauce, she was planning to make stuffed cabbage rolls instead she made this, looks like a generic rice and meat casserole with some greens. Taste's pretty good but don't know what to call it....

We have meals like that quite often. It don't have a name, but is filling and taste good

That's exactly what I had last night.
2 large catfish fillets,
3 pair of huge frog legs , Cole slaw instead of green beans, baked tater,
Unlimited white beans and hush puppies ,

They just went up on price to $18.99.

Worth every penny.

Tonight, Hubby is having left over corn beef and cabbage & taters. I'm not that hungry. Might have a grilled cheese.
But tomorrow we are having some friends over so I have a brisket and some long ribs in dry rub. Will put them in the terra cotta roaster first thing in the morning then on the grill low & slow w/ BBQ sauce to finish up.

I've seen something like that - online they call it unstuffed cabbage rolls. In Betty Crocker's 1958 Picture Cookbook there is a recipe like that with burger (no sausage) and tomatoe soup instead of tomato sauce. It's called Cedric's Casserole. When I make it, I use tomato sauce instead of soup.
 
I feel like we need a drooling emoji for some of these dishes. LOL.
I made shepherd's pie last night. Mom had seconds so she was happy with it. I'm trying to figure out what I should eat but I'm too tired to move right now. Might make myself some grilled cheese sammiches or eat the cornbread I bought yesterday.
