You don't like Mexican lefse? They make them out of corn too.
I don't particularly love Mexican food, but the corn tortillas are better than the flour ones. I make Mexican occasionally because husband likes it . My favorite is a casserole with ground goat ( or beef) , corn , black beans, green and red peppers, garlic , onions, tomato sauce , taco seasoning with cornbread and cheese on top, but not sure that;s really Mexican
 
It's Mexican enough. I like mexican food, but we lived a long time in New Mexico.
Husband's dinner tonight (by request) is a ground turkey patty, brussel sprouts (Yuck, I know he likes them al dente Sojer) and green beans. Little granddaughter and I are having spaghetti and french bread I made this morning.

All Mexican food is the SAME food in slightly different configurations. Same with Chinese food. Same with Italian food.

yeah but I love Chinese and Italian food

But you are right, many ethnic foods are similar. I noticed something interesting too you would never think: Korean food and German food are very similar EXCEPT the spicy. Meat, mostly pork, lots of cabbage , except Kimchi is spicy and Saurkraut is not. The pork is spicy too, the german pork is made into sausage. Both countries eat all the cuts of the meat like the blood sausage and pigs feet

Tonight I am making pressed paninis again but this time I am throwing in a little Thanksgiving twist. Peppered turkey, apple smoked bacon, white deluxe American cheese, thin slices of tomato, and a piece of butter lettuce on sourdough bread. Only on the top slice of bread I am going to spread a thin layer of cranberry pesto. Having A&W cream soda with it.
