We had what my mom used to call Spanish Rice. It doesn't really resemble Spanish Rice, but that's what we always called it. Salad and Texas toast.

The rice is lots of bacon, bell pepper, onions, rice, and tomato sauce. Baked until well heated through. That's pretty well it. I topped it with grated cheese, even though I didn't grow up eating it with cheese.
 
The manicotti looks great. We've been planning to make some, but every time we gain a pound or two. Like pasta salad, once you eat my wife's you can't stop, and the weight never leaves...

Anyway, I've been having some heart arrhythmias, so had a ham and cheese slider (probably not the best for you) and 2 slices of eggplant parmesan. With a couple of homemade cookies and some milk in a minute, before bed.

But you can't beat the price. We use the Walmart $1 French bread, cut thin slices, a slice of ham, melted cheese, onion slice, tomato slice, lettuce, mayo - cost maybe $.70 The eggplant we've gotten 4 meals for two out of it, and two eggs. So maybe $.30 a meal. Sure beat the nearly inedible $12 patty melt I had yesterday at a famous restaurant on Route 66.
