That looks good. I like schnitzel, but have never made it. I've been wanting catfish, collards, cornbread, but it seems so expensive now and the place I usually get it is temporarily closed. I think I should make my own. I'm house sitting, so try not to cook too much and make a mess.

Dinner--leftover Chinese from last night.
I hadn't made schnitzel in forever, but it was fun. I still have 1/2 a can of GF breadcrumbs left and I'm thinking next week will be home-made onion rings or wings :)
 
Schnitzel cooked in duck fat is the bomb!
I made homemade macaroni and cheese tonight, along with steamed broccoli and the leftover baby back ribs.
I bet it has been 20 years since I made macaroni and cheese. Wasn't too bad and mama loved it, so I guess I did good.

I've also been making cheese enchilada casseroles lately. Way less fat. Open a can of red La Victoria enchilada sauce. Spray a casserole dish with pam. Dip cold corn tortillas in the red sauce, lining the bottom of the dish. Sprinkle with cheese, add a spoon of diced green chilis, white onion and sliced black olives. Then another layer of dipped tortillas, add cheese, chili's, onions, and olives. Add another layer of tortillas, and repeat the cheese, onions, chili's and olives. Cover with foil, bake at 350 for 30 minutes, and cut it like lasagna. Best enchilada casserole ever!
 
Saturday night supper was a simple field peas (purple hull peas to be precise) and mashed potatoes.

I took a couple of slices of pork loin, cut into bite sized pieces, fried, and put in the field peas. Also some salt and pepper. I would normally have added onions but I am out.

This was the first time I did this with pork loin. Usually I will either add chunks of ham or some smoked sausage or some Polish sausage.

The mashed potatoes are not the same mashed potatoes that you normally think of. I just use butter, no milk, in them. I've done it this way for years because I normally don't keep milk available as I use so little. I just use however much butter I need to make them smooth and creamy.

It was simple, but very good supper.

Regarding field peas, some say that during the Civil War, the Union troops stormed into Confederate farms and took everything edible. At the time, black eyed peas were considered animal food and other field peas were considered human food, so they left the black eyed peas behind. The southerners end up having to eat black eyed peas because that is about all they had.

For what it's worth, blacked eyed peas are okay, but I much prefer purple hull peas.
 
I put together lasagna last night but tonight it will be steaks, twice baked taters, and a garden salad.

This confirms that it is important to have diversity in our gardens, fields, food stores.
I knew a young woman when I was in h.s. who had a fit that people ate corn. She claimed that it was animal food.
I have had wonderful black eyed peas, and some not so good ones. I prefer mine well seasoned and with a generous amount of bacon or other tasty pork.
 
Tonight we made sweet and sour pork, it was really good. The wife made up the sauce and the breading for the pork (no salt or pepper in either). We had it over a bed of steamed rice.

It was really good. It's funny how now days "we" cook, DW has enough energy to get the ball rolling but not sufficient to finish so I was doing the pork battering and frying, she wanted it fried twice for some reason, hey I just do as I'm told.

It was a pleasant meal, I think we will be eating leftovers for a few days....

Hubby made some very tasty biscuits. Very nice treat. He’s definitely mastered them.

I’ve tried over and over and I simply cannot make good biscuits.
Tonight we are having teriyaki salmon filets, steamed butternut squash (cooked in the Instant Pot) and cauliflower.

My mother used to say that one secret to good biscuits was to use goat's milk instead of cow's milk. Her biscuits were good, but I never did any kind of taste test of one against the other.

I do remember one time as a kid when my aunt, uncle, and cousins were visiting. My uncle was going on and on about how those were the best biscuits until she let it slip that they used goat's milk instead of cow's milk. After that, he got upset. It is almost as if he thought she was trying to poison him.

Of course, you have to get the basic biscuit making down good before worrying about making the best biscuits.
