I hadn't made schnitzel in forever, but it was fun. I still have 1/2 a can of GF breadcrumbs left and I'm thinking next week will be home-made onion rings or wingsThat looks good. I like schnitzel, but have never made it. I've been wanting catfish, collards, cornbread, but it seems so expensive now and the place I usually get it is temporarily closed. I think I should make my own. I'm house sitting, so try not to cook too much and make a mess.

This confirms that it is important to have diversity in our gardens, fields, food stores.Regarding field peas, some say that during the Civil War, the Union troops stormed into Confederate farms and took everything edible. At the time, black eyed peas were considered animal food and other field peas were considered human food, so they left the black eyed peas behind. The southerners end up having to eat black eyed peas because that is about all they had.
For what it's worth, blacked eyed peas are okay, but I much prefer purple hull peas.
TeamworkTonight we made sweet and sour pork, it was really good. The wife made up the sauce and the breading for the pork (no salt or pepper in either). We had it over a bed of steamed rice.
It was really good. It's funny how now days "we" cook, DW has enough energy to get the ball rolling but not sufficient to finish so I was doing the pork battering and frying, she wanted it fried twice for some reason, hey I just do as I'm told.
It was a pleasant meal, I think we will be eating leftovers for a few days....
